The ingredients for 10 to 15 people
500g Hunting sausage
500g Beer ham
500 g Bacon or 250 g Fatty bacon
5 Prignitz Knacker
8 onions
8 bell peppers
350 g tomato paste
1 jar of pickles
1 dried chili pepper
5 bay leaves
2 tbsp mustard
5 garlic cloves (or more if desired)

The preparation
First, fry the bacon and add the diced sausage. Set the Prignitzer Knacker sausages aside. Fry everything thoroughly and then add the Prignitzer Knacker sausages (sliced). Fry them thoroughly again and then add the onions until they are translucent. Deglaze with a little water if necessary.
Now add the crushed garlic with the tomato paste and the diced bell peppers and fry them briefly. Now you can add the finely chopped cucumbers along with some of the cucumber juice and all the spices.
Now add 3 liters of water and the broth and let it simmer gently for about 20 minutes.
Our tip: Let the solyanka sit for a day for the best flavor. Serve the solyanka with a spoonful of sour cream or sour cream for a more refined flavor.
