Prignitzer Knacker – A hearty snack with great potential

The gourmet sausage for quick hunger or big appetite -The name of this sausage says it all. Because of its hearty bite there is an audible crack (German: Knack). Knackwursts have many names. They are called Mettenden or Bauernknacker and in Austria also Schübling. A notable Austrian name is „Beamtenforelle“ (Civil servant trout).

Air dried

Our Prignitzer Knackers are among the raw sausages and are made from a mixture of beef and pork bacon. Light smoke gives the sausage its typical flavor, which is further intensified by air drying. This drying process allows the sausage to be kept for several weeks, even outside of the fridge.
