Delicate taste and mild aroma convince - Veal sweetbread belongs to the offal and has many names. For example, it is known as calf's milk, milke, midder or schweser. It refers to the thymus gland of the calf, which is responsible for the animal's immune system and deteriorates with age. The almost white tissue is located in the chest area and weighs about 250 g. It is often mistaken for brain, but its structure is much firmer and it is rich in potassium, purines, and vitamin C.
