This prevents the meat from becoming hard and tough like many other muscle strands, but remains uniquely tender. At the same time, however, the fillet is also a very small cut of meat, making it one of the most expensive.

Veal fillet is even leaner than the classic beef fillet and is an absolute delight for pan-frying or sous-vide cooking. High-quality veal can be recognized by its light pink color. This indicates the calf's diet, which should consist of plenty of milk and some hay until slaughter at 8-10 months. Our veal therefore comes from farms with species-appropriate husbandry and good feed – because quality is our top priority.
