From braised meat to smoker classic - These ribs offer a lot and are by no means short. The name can be misleading, because short ribs are very large and are affectionately known in the barbecue scene as “Dino Ribs“. The recipes for this cut range from classic French cuisine toBBQ area.

The cut

In Germany, short ribs are called transverse rib (Querrippe), but also tension or diaphragm rib. The cut is between the brisket and the flank. Contrary to many claims, the majority of the meat is not between, but on the bones. Crucial for good taste is the preparation on the bone which makes the meat more aromatic.

The meat contains a lot of collagen, is well marbled and topped with a layer of fat. Short ribs refine with their tasty aroma any braised dish. The global BBQ scene will protest, however, because short ribs clearly belong on the smoker or grill.
