Preparation of beef ribs
Beef ribs have become increasingly popular in recent years. Pork spare ribs have long been a classic. But beef ribs also impress with their tenderness and full flavor. Whether you prepare the beef ribs on the grill or in the oven is entirely up to you.
Preparation on the grill & in the smoker
- Remove the whole beef rib from the refrigerator about 30 minutes before preparation so that it can slowly reach room temperature.
- Preheat the grill to 130°C and create an indirect grilling zone. For a charcoal grill, cover only half the surface with charcoal, and for a gas grill, set only one burner to low heat.
- Remove any silver skin from the meat.
- Place the beef ribs over the indirect heat of the grill with a meat thermometer inserted and close the lid. This creates even top and bottom heat.
- Cook the ribs until they reach an internal temperature of 90°C. You'll need plenty of patience, as the cooking process can take up to five hours.
- Remove the beef ribs from the grill about 30 minutes before the end of the cooking time and brush them all over with a classic BBQ sauce, for example, and then finish grilling them.
- Before serving, remove the meat from the grill, wrap it in aluminum foil and let it rest for 10 minutes.
- Now the meat should come off the ribs easily.
Alternatively, you can prepare the ribs in a smoker. Preheat it to the lowest temperature and let the beef ribs marinate for 7-10 hours. If you want to reduce the cooking time in the smoker, you can also pre-cook the ribs in the oven for about 4 hours and then briefly sear them on the grill.
Preparation in the oven
- Preheat the oven to 130 °C.
- Meanwhile, sear the ribs on all sides in a large roasting pan.
- Then add beef stock, a large splash of red wine and spices such as thyme.
- Cook the ribs until they reach an internal temperature of 90°C.
Alternatively, you can also prepare the ribs with a little garlic, thyme and butter in a sous vide cooker for 12 hours at 80 °C and then grill them briefly.
Spices
For marinating beef ribs or as a rub, we recommend our spices. Before you generously rub the ribs, you should first glaze them with a little honey or maple syrup. Then, ideally, refrigerate the meat overnight.
Finally, serve the ribs with plenty of homemade BBQ sauce for a perfectly authentic BBQ experience! You can also use the sauce to brush the beef ribs continuously during the grilling process.
Side dishes
As a side dish to the beef ribs, we recommend baked potatoes with herb butter and colorful vegetables such as carrots, peppers and eggplant, or the classic corn on the cob.
