Ingredients for 2 people
For the beef fillet steak:
- 2 beef fillets , preferably dry-aged (approx. 200 g each)
- Sea salt and freshly ground black pepper
- 2 sprigs of rosemary
- 2 garlic cloves, lightly crushed
- 2 tbsp butter
- 1 tbsp olive oil
For the fried potatoes:
- 400 g waxy potatoes, pre-cooked and sliced
- 1 small onion, finely diced
- 2 tbsp goose fat or butter
- salt and pepper
- Fresh parsley, chopped
For the beans:
- 200 g green beans
- 1 tbsp butter
- 1 shallot, finely chopped
- 1 tsp coarse mustard
- salt and pepper
Our preparation tips:
1. Beef fillet steak: tender and aromatic
Prepare the steak: Remove the beef fillets from the refrigerator about 30 minutes before cooking to allow them to come to room temperature. Sprinkle with sea salt and let them rest briefly.
Fry the steak: Heat a cast iron pan and add the olive oil. Fry the fillets over high heat for about 2 minutes per side until a golden brown crust forms.
Refine with butter: Add butter, rosemary, and garlic. Baste the meat regularly with the aromatic butter for an intense flavor.
Finish cooking in the oven: Let the steaks cook in the preheated oven at 120 °C (top/bottom heat) until the desired core temperature:

- Medium Rare: 55 °C
- Medium: 58 °C

Blanch the beans: Boil the green beans in salted water for about 5 minutes, until they're tender. Refresh them in ice water to preserve their color.
