Preparation in the pan

It all depends on the right preparation!

Only the combination of top-quality meat and expert preparation guarantees an incomparable taste experience. Below are some tips that will significantly contribute to the success of your steak.

Preparation:

Before cooking, the steaks should rest at room temperature for one to two hours. Then, lightly trim the fat around the edges – be careful not to cut into the meat or completely remove the fat to prevent the meat from drying out later. If you wish, you can trim the fat around the edges after cooking.

Recommended pan:

A cast iron pan is best for cooking, as it can withstand the high temperatures and ensure optimal heat distribution. Please do not use a coated non-stick pan, as these are not suitable for the required cooking temperatures.

Recommended frying fat:

Be sure to use the right cooking fat or oil! Choose a product that can withstand high temperatures. We recommend high-temperature (refined) oils such as peanut oil, sunflower oil, or rapeseed oil.

Frying process:

Before adding the steak to the pan, wait until the fat or oil is really hot. You can easily tell by dipping a toothpick or wooden skewer into the oil: When bubbles form, the oil is hot. (Caution: Risk of burns!)

For optimal results, the steak should only be turned once. Sear it first. To turn the steak, use tongs. This ensures that no meat juices escape during cooking. You should cook the steak for about one minute on each side.

Oven cooking process:

Now you can place the cooked steak in the preheated oven (approx. 120°C top/bottom heat). This will ensure that the steak is evenly seared on the outside while cooking on the inside. Depending on the desired doneness, you can leave the meat in the oven for between 15 and 20 minutes.

Before serving, the steak should rest for 5-7 minutes so that the meat juices can distribute evenly.

Seasoning:

The steak can be seasoned either before or after cooking, depending on your preference. However, we recommend seasoning the meat after cooking to prevent any spices from burning in the pan and rendering the steak inedible.
